Keto Raw Lime Cheesecake


Ingredients (Crust)
1 1/2 cups macadamia nuts
1 cup shredded coconut
3 tablespoons Xylitol (melted)
1 teaspoon vanilla extract
1 teaspoon salt
Mix macadamia nuts and shredded coconut in food processor.
Melt Xylitol.
Add melted xylitol, vanilla extract and salt to macadamia/coconut mix. Process one more time until all ingredients combine.
Add crust into cheesecake round. Press crust down until hard with your hands. Place in refrigerator.

Ingredients (Filling)
3 cups cashews (soaked 3-12 hours)
1 cup nut milk
1/2 cup Xylitol melted
1/3 cup fresh lime juice
1 tablespoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
1 cup coconut oil, melted
Blend soaked cashews, nut milk, xylitol melted, fresh lime juice, vanilla extract, salt, cinnamon and cayenne. Once blended add melted coconut oil and blend again.
Add filling to crust.
Place in refrigerator for 1-2 hours before serving. This cheesecake goes great with fresh berries.
